I’m Walking on Sunshine!! Open Face Steak Tacos

It’s amazing what one single day of sunshine can do for the soul….and I find myself humming a lot, and just in a general happy state of mind.

I’m finally beginning to feel like I’m coming out of hibernation, with the winter doldrums quickly melting away!

I have the strong desire to get outside and get my hands in the dirt… I’m watching my daisies for signs of life, looking for my tulips and worried that the voles just might have won the war this year…and I’m getting excited about planting fresh herbs, tomatoes, peppers, and maybe a lettuce bowl..

I say all of this, understanding that I am a fickle person who does not do well in the heat, and by August, I’ll be wanting the cooler weather and thinking of the days that I can wear sweaters and plan cold weather menus. I think the perfect weather for me would be 70-75 degrees year round. I’ve been told that I should move to San Diego. I probably should, but my fickle-ness would have me longing for some sort of change of season.

But for now, I’m going to embrace the awakening spring and enjoy this sunshine…

On days like today, I want to make it quick in the kitchen. Sounds crazy coming from a girl who loves to cook and spend time in her kitchen, but our spring and summer months are so short, I want to be able to get outside, and enjoy the sunshine and all of the things I love to do during those months.

I feel myself craving lighter meals, grilled meats and vegetables, and looking forward to the different fruits of the summer season, the perfect ingredients for a light and quick meal, like open face steak tacos.

I love these tacos because the cooking can be done on the grill, and it’s a matter of slicing up a few vegetables to top them off. The best thing about them is that you can change them up to meet everyone’s liking… make them chicken, shrimp, or veggie tacos with their choice of topping!

I like to throw the tortilla right on the grill until it’s crispy so that I have to eat it as open face, but you can leave it on for a few minutes just to heat it, which would make folding the taco easy to eat.

I’m feeling summer today!!

Life is good… it’s sunshine…it’s a lighter mood, lighter meal, and those little voles think they’ve won, but the war isn’t over yet…kind of good…

1/2 cup English cucumber, diced
1/2 cup tomato, diced

Grill the tortillas until crispy and blackened around the edges.

In a medium size bowl, combine the cabbage, cucumber, tomato, black olives, onion, garlic, jalapeño, cilantro, lime juice, olive oil, salt and pepper.

Layer the cabbage and steak on the grilled tortilla. Top with avocado, Caso Blanco, and garnish with more cliantro. Squeeze some more lime juice over the top.

  1. Prudy, we had the same weather you did – sunshine and warmer weather! You need to plant daffodils – they will not eat those! I will never turn down a good homemade taco hot off the grill. Looks delicious – wish I had that for dinner tonight 🙂

    • Judi…those darn voles and I have been at war for about five years now. I will definitely try daffodils. I don’t know why I never did try them! Those little buggers have done a number on my hostas too..
The tacos are really good… quick and easy… they give me time to march off to war in my back yard. 🙂

  2. Looks like a perfect spring meal Prudy! Best part of grilling? The lack of pots and pans to wash 🙂 Hope you see the tulips sprouting soon!

    • You are not kidding Nancy!! That is one thing I won’t miss this summer… even better, I think we’ll be tearing the kitchen walls all down to build a new one this summer…so there will be a lot of cooking on the grill! Lots of tacos! 🙂

  3. This makes me want to get the grill out right now. We still have snow on the ground, and it doesn’t seem as warm as the weather report promises, but with any luck winter is almost over and bar-b-q season around the corner. Thanks for posting this delicious reminder of things to look forward to – along with the spring flowers of course.

    • It’s just been such a long winter, hasn’t it Hilda? A couple of weeks ago, I decided that if the warmer weather isn’t coming to me, I’m going to start spring without it. Who needs warm weather to do spring and summer stuff?? Lol.. Ok, I do. But it doesn’t hurt to try, right?
I’m glad you enjoyed this. I hope that snow melts soon for you. 🙂

  4. Your tacos are loaded up with all kinds of deliciousness! I’m glad you’re enjoying the sunshine, Prudy! We walked over to one of our favorite brunch spots this morning and actually started to perspire a bit from the heat!

  5. “What is a taco?..that which we call a taco by any other name should taste so sweet .” William Shakespeare Gonzalez.. act 2 scene 2..Romero and Juliet… I always said Shakespeare said it best…

  6. Lighter meals, more sunshine—all we need are a couple of Angie’s Latin Lovers and summer won’t know what hit it! These tacos look delicious, Prudy!

  7. You can almost see the sun and happiness in your photos, great shots. We are heading towards winter here, but still get days of sun and humidity (they will get more precious as winter advances), so will rely on you to send me virtual doses of sun! 😀

    • Gab.. they really were. I won’t get into how crunchy the tortilla was…so it got a little sloppy to eat….and I won’t mention that I didn’t care that I was dropping crumbs all over me… nor will I mention that there may have been a couple of times that I picked a tomato off of my lap and ate it. :-O There is no pride when it comes to something yummy.. 🙂

  8. They are just lovely!!! 🙂 And awesome photos, Prudy!! ❤

Btw, I always wanted to say this but I seem to forget it every time: I love the header photo, you sexy you!! 😀 ❤

  9. Isn’t it nice that the weather is slowly warming. I planted tomato and basil seeds last week and am eager to start gardening like you. I agree with Judi about daffodils…voles and deer don’t like them. Your tacos sound great. We will head up to Maine in May and get the grill out of storage for summer grilling and your tacos will definitely be on my mind.

    • Oh Karen, I’m envious of summer grilling in Maine! I’ve always wanted a summer cottage on the ocean.. 🙂
I definitely need to plant some daffodils this fall! I’m guessing that I’ll know in the next couple of weeks whether or not the voles won!
      Thanks so much.. 🙂

  10. Why so hard on yourself? 🙂 no one would call the seasons fickle! You are just like everything else in nature: you go with the flow. And these tacos just prove my point: anything that tasty and pretty and all round fabulous must just be right! 🙂

  11. These tacos are great! Love all the toppings and sounds like the perfect meal to enjoy while it’s nice and sunny outside. You photographs are great! 🙂 And yes, I’ll have a margarita, thank you…

  12. Isn’t it wonderful that the sun and slightly warmer temps are finally here?! I definitely feel like i get a renewed energy around this time of year. I may have to get some gardening tips from you once we move into our house.
These tacos are the perfect spring or summer meal! Such fresh, delicious ingredients 🙂

    • Thank you Amy! You’re not kidding…it’s amazing how awake I feel now that the warmer weather is here! I say that, but in reality, it’s snowing again today. We’re supposed to get 3 inches!! Lol.. Hopefully this is the last of it though… we can handle this. 🙂
